Ingredients
1 rack of pork (2-3
pounds), frenched
Salt and pepper
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon fresh
rosemary, chopped
1 tablespoon fresh
thyme, chopped
Pomegranate Demi Glaze:
1 cup pomegranate juice
1/2 cup red wine
1/4 cup balsamic vinegar
1/4 cup sugar
1/2 cup beef broth
2 cloves garlic, minced
1 tablespoon butter |
Preparation
Step 1
Preheat the oven to 375°F. Season the rack with salt and pepper.
Step 2
In a small bowl, mix together the olive oil, garlic, rosemary,
and thyme. Rub the mixture on the rack.
Step 3
Place the pork rack in a roasting pan and roast in the preheated
oven for about 1 to 1 1/2 hours.
Step 4
Remove the pork from the oven and let it rest for 10-15
minutes before slicing.
Pomagranate Demi Glaze:
Step 1
In a saucepan, combine the pomegranate juice, red wine,
balsamic vinegar, and sugar. Bring to a boil over medium-high
heat.
Step 2
Reduce the heat to low and simmer for about 15-20 minutes,
or until the mixture has reduced by half.
Step 3
Stir in the broth, minced garlic, and butter. Continue to
simmer for another 5-10 minutes, or until the sauce has
further thickened.
Step 4
Remove the sauce from heat and strain it through a fine mesh
sieve to remove any solids.
Step 5
Serve the pomegranate demi glaze drizzled over your favorite
grilled meats, roasted vegetables, or other dishes. |
