Flank Steak Caesar with Roasted Brussels

Ingredients

1 pound flank steak
1 pound Brussels
sprouts, halved
1/2 cup grated Parmesan
2 tablespoons olive oil
Salt and pepper to taste
Homemade caesar
dressing
Caesar Dressing:
1/2 cup mayonnaise
2 cloves garlic, minced
2 tablespoons lemon
juice
1 teaspoon Dijon mustard
1/4 cup grated Parmesan
cheese
Salt and pepper to taste

Preparation

Step 1
Preheat the oven to 400°F. Season the flank steak
with salt and pepper on both sides. Let it sit at
room temperature for about 30 minutes.
Step 2
In a large skillet, heat 1 tablespoon of olive oil over
medium-high heat. Add the flank steak and sear
for about 3-4 minutes per side, or until browned.
Step 3
Transfer the steak to a baking sheet and roast in
the oven for 10-15 minutes. Let the steak rest for
5 minutes before slicing.
Step 4
In the meantime, toss the brussels sprouts with
the remaining olive oil, Parmesan, salt, and
pepper. Spread them out on a baking sheet and
roast in the oven for 20-25 minutes.
Step 5
To make the Caesar dressing, whisk together all
dressing ingredients in a bowl.
Step 6
Serve the sliced flank steak with the crispy
brussels sprouts and drizzle with Caesar dressing.
