Caramelized Onion Gnocchi

Ingredients
2 large onions, thinly sliced
3 tablespoons butter
1 tablespoon olive oil
1 pound potato gnocchi
1 teaspoon sugar
Fresh thyme leaves, for garnish
Grated gruyere cheese, for serving
Salt and pepper to taste |
Preparation
Step 1
In a large skillet, melt the butter and olive oil over
medium heat. Add the sliced onions and cook,
stirring occasionally, for about 10 minutes until
they start to soften.
Step 2
Sprinkle the sugar over the onions and continue
cooking, stirring occasionally, for another 10-
15 minutes until the onions are caramelized and
golden brown. Season with salt and pepper to
taste.
Step 3
While the onions are caramelizing, cook the potato
gnocchi according to the package instructions in
a separate pot of salted boiling water. Drain the
gnocchi once they float to the surface.
Step 4
Once the onions are caramelized, add the cooked
gnocchi to the skillet with the onions. Gently stir to
coat the gnocchi with the caramelized onions.
Step 5
Cook the gnocchi and onions together for a few
minutes over medium heat, allowing the flavors to
combine. Taste and adjust the seasoning if needed.
Step 6
Serve the caramelized onion gnocchi warm,
and garnish with fresh thyme leaves and grated
Gruyere cheese |
